IIS >> Sharepoint versus File Server

We are considering implementing Sharepoint Portal server with
Sharepoint Services for our Intranet and also for online collaboration.


Sharepoint can store files through Document Libraries. Should we stop
using file servers if we want to fully utilize Sharepoint or do we need
both?
If we use Sharepoint to manage all our files will there be other ways
to access those files aside from the web interface?

You do not need both and it would only confuse things. Just go with
SharePoint.

Yes - MS Office apps can call directly into the URLs and Windows Explorer
can also be used as a mapped drive or Network place.
